Pats Chat: Simple Salmon Salad

Did you dine at your favorite fish place last night? Got leftover salmon? Don’t blush! Here’s a lovely salad for your delicious pink fish!

INGREDIENTS:

2 cups cooked salmon (cut into bite-sized chunks)
1 cup of fresh scallions (chopped)
1 cup fresh celery (chopped)
1/4 cup fresh parsley (chopped)
2 cups salsa
1 head leafy red lettuce (cleaned and separated)
Capers for garnish
1 fresh lime (cut into wedges)

INSTRUCTIONS:

In large mixing bowl, combine salmon with vegetables. Add salsa, and toss well. Cover and chill for at least one hour.

Place lettuce leaves on individual salad plates. Mound salmon salad onto each plate. Top with capers, add a couple of lime wedges, and serve.
